Coumarin was discovered in 1820 in the black bean. Coumarin exists in many plants in the form of glycosides. It possesses the strong aroma of black beans, as well as the sweet scent of newly cut grass and chocolate, with a lingering fragrance. The fresh hay aroma is largely caused by the formation and release of coumarin during the fermentation and decomposition of glycosides during the drying of newly cut grass. Coumarin is used in the manufacture of perfumes. It is commonly used in the formulation of newly cut grass and floral-fruity fragrances, as well as in essences such as violet, sunflower, freesia, hawthorn, orchid, and lavender. Coumarin, together with vanillin, can be used for flavoring in confections and pastries, and can enhance the natural aroma when added to tobacco. Adding coumarin to galvanized (or cadmium, nickel) electroplating solutions can reduce pinholes in the coating and increase brightness. Coumarin is a raw material for the manufacture of other perfumes and various other chemicals. Coumarin is the parent compound of a large class of derivatives. Some of these derivatives exist naturally, while others are produced through synthetic methods.
