Potassium sorbate, also known as potassium 2,4-hexadienate or BB powder. Colorless or white flaky crystalline powder. Odorless or slightly smelly. Easy to absorb moisture and be oxidized and colored in the air. Relative density 1.363 (25/20 ℃). Melting point 270 ℃ (decomposition). Easy to dissolve in water, soluble in ethanol and propylene glycol. Natural sorbic acid and potassium sorbate mainly exist in berry fruits, and currently can only meet the large market demand through chemical synthesis. Potassium sorbate can effectively inhibit the activity of mold, yeast, and aerobic bacteria, as well as prevent the growth and reproduction of harmful microorganisms such as Clostridium botulinum, Staphylococcus aureus, and Salmonella. Its inhibitory effect on development is stronger than its bactericidal effect, thereby effectively extending the shelf life of food and maintaining its original flavor.
