Potassium sorbate is the potassium salt of sorbic acid and is a preservative allowed to be used in China. It is a white to light yellow scaly crystal, crystal particle or crystal powder, odorless or slightly odorous, and is prone to moisture absorption, oxidation and decomposition, and discoloration when exposed to air for a long period of time. Potassium sorbate is easily soluble in water and soluble in propylene glycol and ethanol. Due to its insolubility in water and inconvenience in use, potassium sorbate is commonly used.

White to light yellow flaky crystals, crystalline powders, or in granular form. Odorless or slightly smelly. Long term storage in the air is prone to moisture absorption and oxidation decomposition. Easy to dissolve in water. Dissolve in propylene glycol and ethylene glycol. Potassium sorbate is stable in a sealed state and easily absorbs water, oxidizes, and colors when exposed to humid air. Potassium sorbate has good thermal stability, with a decomposition temperature of up to 270 ℃.

Usage

Potassium sorbate is mainly used as a food preservative, as well as for cosmetics and feed mold prevention. It has a strong inhibitory effect on spoilage bacteria and mold, and is easily soluble in water, making it widely used. Its antibacterial growth effect is stronger than its bactericidal effect, and the lower the pH value, the stronger the antibacterial effect. Potassium sorbate can effectively inhibit the activity of mold, yeast, and aerobic bacteria, as well as prevent the growth and reproduction of harmful microorganisms such as Clostridium botulinum, Staphylococcus aureus, and Salmonella. However, it is almost ineffective against beneficial microorganisms such as anaerobic spore forming bacteria and Lactobacillus acidophilus. Its inhibitory effect on development is stronger than its bactericidal effect, effectively extending the shelf life of food and maintaining its original flavor. Its anti-corrosion effect is 5-10 times that of similar products such as sodium benzoate.
