Natamycin, also known as horse horse mold or swimming mold, was first isolated from Streptomyces natalis in 1955 and its activity is much better than that of sorbic acid. In June 1982, the US FDA officially approved natamycin as a food preservative and classified it as a GRAS product. Natamycin is a highly effective inhibitor of mold, yeast, and fungi used to inhibit them in food. It is safe, reliable, and does not affect product flavor. It is widely used in foods such as cheese, meat products, pastries, and juices worldwide. This product is refined by deep fermentation and multi-step extraction of streptomycin, and its formulation is made by mixing 50% natamycin and 50% lactose.
