White crystalline powder or colorless transparent neutral viscous liquid, dilute solution with strawberry aroma, sweetness of 75% to 95% of sucrose, pure sweetness. Easy to dissolve in water, ethanol, glycerol, and propylene glycol. Highly hygroscopic. The heat resistance is good, and there is no change when heated at 1.0 ℃ for 1 hour at pH values of 3-7. High stability, able to coexist with proteins or amino acids without undergoing browning reactions. ADI does not require special regulations (FAO/WHO, 1994).
