Thickner

GELLAN GUM CAS 71010-52-1

Short Description:

GELLAN GUM CAS 71010-52-1

Gellan gum is an almost white powder, odorless and tasteless. Its most significant characteristic is that it can form a gel at low concentrations (0.05%). Generally, it is first dispersed in water (insoluble in cold water), heated to 75°C for hydration, added with appropriate cations, and then heated to 80-90°C. After cooling, a gel is formed. The gel is reversible to heat, but if the type and concentration of cations are properly controlled, the gel can maintain its gel state at higher temperatures (100°C).

Gellan gum can be used as a thickener, gelling agent, stabilizer, and gelling agent in biochemical research. Phytagel, a substitute for agar secreted from Pseudomonas, is a mixture of glucuronic acid, rhamnose, and glucose. It is colorless, translucent, and highly tough, making it a key ingredient in the preparation of plant tissue culture media and microbial culture media. Due to its ability to overcome the inherent defects of traditional agar in plant tissue culture, it has brought a new revolution to botanical research and has become internationally recognized as the preferred product for plant tissue culture.
