Used as a food additive as an acidifier, in fruit juices, beverages, and jellies; As a coagulant, gluconic acid lactone is a food coagulant allowed by GB2760-1996 regulations in China. It is used for soy protein and cow's milk protein. When used as a tofu coagulant, 0.25% to 0.3% is added to soy milk. Compared with calcium sulfate, this product has better water solubility and can be evenly dispersed in soy milk, resulting in fine tofu that is often used in combination with calcium sulfate;
Used as a leavening agent, it is less reactive at low temperatures compared to other acids. It is converted to gluconic acid by heating and then reacts with sodium bicarbonate to produce carbon dioxide bubbles, which foam evenly and finely. It can be used as a leavening agent for biscuits, bread, etc., especially suitable for cakes;
Used as a chelating agent to adjust the pH value of milk products and prevent the formation of milk stones and beer stones; It can also be used as a toothpaste additive to help remove dental plaque, as this product can react with dental plaque;
It can also be used as a photographic developer, a stabilizer for vitamins in medicine and cosmetics, and a stimulant relief agent; Adhesive additives on fabrics; Additives for detergents; Bottle washing agent; Metal surface cleaning agents before electroplating, etc.

White crystalline or crystalline powder, odorless, with a sweet taste followed by bitterness and a sour taste. Melting point 150-152 ℃ (decomposition). Easy to dissolve in water (room temperature, 60g/100mL), slightly soluble in ethanol (1g/100mL), insoluble in ether. Hydrolyzed into an equilibrium solution of gluconic acid and lactone in aqueous solution, the pH value of the newly prepared 1% aqueous solution is 3.5, which becomes 2.5 after 2 hours. The oral LD50 of mice is 17.8g/kg, and there are no special regulations on ADI (FAO/WHO, 1994).
