Dark red to orange red clear liquid, its color is darker when extracted with ethanol than when extracted with ether. Slightly sticky, with a strong spicy flavor and a burning sensation, it can reach the entire mouth and even the throat (the spiciness of pepper is mainly on the tongue, while the spiciness of ginger is mainly on the edge and back of the tongue). Partially soluble in ethanol and soluble in most non-volatile oils.
